LEEK PIE

Ingredients:

  • 1sheet Puff pastry, room temperature
  • 1t. Flour
  • 1/4stick Butter
  • 2c. Leeks, washed well, chopped (white & pale green parts only)
  • 1/4c. Cilantro, finely chopped
  • 1c. Baco-bits
  • 3 Eggs, large
  • 2/3c. Half & half
  • 1/3c. Milk
  • 1/4t. Salt
  • 1/4t. White pepper
  • 1/8t. Ground nutmeg

Directions:

 

*Preheat oven to 425F. Grease 13X9" pyrex casserole, sprinkle with flour. 

*Unfold puff pastry. Place into casserole. 

*Pierce all over with fork, and bake in oven 10 minutes. *Remove from oven and cool. 

*Reduce oven temp to 400F. 

*Melt butter in heavy pan. 

*Add leeks, cilantro, saute until beginning to soften, about 3 minutes. Spoon into crust, and sprinkle baco-bits over leeks. *Blend eggs, half&half, milk, flour, salt, pepper, and nutmeg in blender. 

*Pour over leeks. Bake until filling is set in center (25-45 min). Cool 10 minutes and serve.
*Serves 8.

 

ROASTED PEPPER & ONION TART

Ingredients:

  • 1jar Roasted peppers
  • 1 Pie shell, deep, thawed
  • 1/4c. Basil leaves, chopped
  • 2/3c. Half&half
  • 1-1/2c. Onion, finely chopped
  • 2 Eggs, large
  • 2T Olive oil
  • 1T Flour
  • 1/4t. Salt
  • 1/8t. White pepper

Directions:

 

*Preheat oven to 425F. Saute onion in olive oil until just beginning to color. Cool. 

*Chop peppers roughly. Arrange onion in pie shell, top with peppers, and sprinkle with chopped basil. 

*Blend half&half, eggs, salt, pepper and flour in blender. Pour mixture over vegetables in pie shell. 

*Bake tart until mixture sets (20-35 min). Cool 10 minutes and serve. *Serves 6.
