Citrus Punch
Ingredients/Directions:
May also add: 1 qt gingerale or lemon/lime soda, sliced strawberries and bananas
Orange Blossom Punch
Ingredients:

2 6oz. lemonade concentrate
-
1 6oz. orange juice concentrate
-
9 cups cold water
-
5 pts. pineapple sherbert
-
1 qt. vanilla icecream
Directions:
*Combine concentrates and water. Scoop sherbert and icecream into bottom of a
punch bowl.
*Add concentrates and water , mix until practically melted. Float
orange slices in punch.
Serves: 20 cups
(This one is great for a bridal or baby shower, guests always rave about it)
Wedding Punch
Ingredients:

1 46 oz. Pineapple juice, unsweetened
-
1 12 oz. Orange juice, unsweetened
-
1 6 oz Lemon juice, unsweetened
-
5 ripe banannas
-
6 c. water
-
3 c. sugar
-
4-6 qt. ginger ale
Directions:
*Wizz bannannas with small amount of juice.
Mix all ingredients except ginger ale, and freeze in pans. *Thaw out for 1 hour before using.(This should be slushy)
Place in punch bowl and pour in ginger ale.
(This is a recipe my sister used for her wedding)
Serves 25-30.
Almond Tea
" Kindness Tea from Mary Lou!"
One of my mother volunteers brought a big mug of this tea to me one cold
December morning.
I have been drinking it ever since and sharing her kind, sweet act with
others!
Ingredients:
-
4 c. water
-
3/4 to 1 c. sugar
-
1/4 c. lemon juice ( in bottle, is fine!)
-
1 1/2 c hot strong tea (I use orange herb tea - it is perfect for this)
-
2 2/3 c. pineapple juice
-
1/4 c. Tang (orange drink mix)
-
3/4 tsp. almond extract
-
3/4 tsp. vanilla
Directions:
*Combine water, sugar and lemon juice in Dutch oven (large kettle),
simmer 5 minutes.
*Add remaining ingredients, cook till thoroughly heated. Yield 2 quarts
*Leftovers can be refrigerated and reheated in the microwave.
Lemon-Berry Pitcher
Punch
Ingredients:

1/2 c. sweetened lemonade drink mix
-
4 c. cold water
-
2/3 c. cranberry juice, chilled
-
1 1/2 c. lemon-lime soda, chilled
Directions:
*In a pitcher- combine drink mix, water &
cranberry juice.
*Stir in
soda, Serve immediately with ice and lemon/lime curls. (6 cups)
*Serve in tall clear glass, with a pretty napkin. Perfect for a hot
summer day. Or... package the ingredients up and pack in an inexpensive
wicker basket with a big bow and a recipe card.
*Great for a "new neighbor welcome", a thanks or a drop by
visit to a friend's home, on a summer day.
Layered Spinach
Salad

3/4 lb. spinach, washed and patted dry
-
1/2 medium cucumber, thinly-sliced
-
1/2 c. thinly-sliced radishes
-
1/2 c. thinly-sliced green onions
-
2 eggs, hard cooked, sliced
-
3/4 c. salad dressing, ranch-style
-
5 slices cooked bacon strips (use Veggie Bacon strips or bacon bits)
-
1/2 c. peanuts
Directions:
*Arrange spinach in bite-size pieces in bottom of clear glass bowl.
layer cucumber, radishes, green onion and eggs. Spread dressing over
top. Cover and chill for up to 24 hours. Sprinkle with bacon bits
(veggie type) and peanuts. Serves 6.
*For a punch bowl size salad to serve at a luncheon or party use:
2 big bags of spinach, bunch of green onions, small bag of radishes, 8
eggs, peanuts and bacon bits as desired, about 3 cups of ranch dressing.
This is always a hit, I've passed this recipe on to tons of potluck and
luncheon cooks!
Mushroom Herb
Loaf
Ingredients:

1 1/2 c. Pepperidge Farm
Stuffing
-
3/4 c. chopped walnuts
-
1 egg, well beaten
-
1/3 cup grated onions
-
1 pkg. George Washington Broth (dry)
-
1 can mushroom soup, diluted with 1/4 c. water
Directions:
Mix and bake at 350 degrees for
40 minutes.
For a healthy meal, serve with: A baked potato, garden salad and a green
vegetable!
Artichoke Dip
Ingredients:
-
1 can artichoke hearts
-
1 can green chilies
-
1 C. Parmesan cheese
-
1 C. mayonnaise
Directions:
*In a food processor, chop artichokes and chilies. Add Parmesan cheese and mayonnaise.
*Whip together. Put into a greased casserole dish and bake in a 350 degree oven for 15-20 minutes until bubbly and just starting to brown.
*Serve with chips, Nachos, or fancy crackers. It you like it "hot", add more chilies.
Chicken Filled Biscuits
Ingredients:

1 - 5 oz. can veggie chicken, diced
-
1 - 3 oz. cream cheese, soft
-
1 - Tbsp. sliced green onion with tops
-
Dash Worcestershire Sauce
-
1 - Pkg. refrigerated biscuits (10)
Directions:
*Mix filling, Roll out biscuits, 4 inch circles
Spoon filling onto circle,
*Moisten edges with water and fold over
*Bake for 8-10 minutes at 400 degrees.
* Makes 10. You may want to double this for tasty bundles for a meal. For a simple meal: Serve with fruit salad, chips and special beverage.

Finnish Summer Soup
Ingredients:
Directions:
*Heat water to boiling, add potatoes. Reduce heat; cover and simmer for 5 minutes. Add salt, pepper, butter , onions, carrrots, green beans; simmer for 8 more minutes.
*Add peas and cok for 2 minutes or until vegetables are crisp/tender.
*In bowl, stir together cream and flour until smooth; stir into vegetables.
*Cook until thickened.
Makes 5 1 2/3 c. servings.
Greek Macaroni
Ingredients:

2 c. uncooked macaroni
-
1/4 c. margarine
-
1 c. grated Parmesan/Romano Cheese (Kraft Brand)
-
2 Tbsp. oil
-
1 large onion, diced small
-
2 garlic cloves ( this really flavors, but you could use garlic salt)
-
1 20 Oz. can Worthington Vegeburger
-
1 tsp. oregano
-
4 eggs (Can use Egg Beaters Brand)
-
1 Tbsp. flour
-
1/2 tsp. salt
-
1/2 milk
Directions:
*Boil macaroni, Drain
*Melt margarine, add to macaroni
*Add cheese to macaroni, Mix well
*Saute onions and garlic with oil
*Add burger, oregano and cook for 5 minutes, Stir.
*Oil a 9x13x2 baking dish, put macaroni mix in
Beat eggs in a bowl, wisk in flour, salt and milk
Pour over macaroni
Bake for 45 minutes in a 350 degree oven
9-10 servings and can be frozen!
Meatless Meatballs
Ingredients:
Directions:
*Mix, make meatballs and put in oiled casserole dish
Cover with spaghetti sauce and bake for 35 minute at 350 degrees, or until brown.
*These meatballs freeze well. cover with sauce and bake!
Baked Apples
Ingredients:
Wash and core apples. Fill centers with :

2 Tbsp. honey
-
1 Tbsp. water
-
2 Tbsp. orange juice
Directions:
*Cover pan tightly and bake at 350 degrees for 45-60 minutes,
until centers are tender.
*Baste frequently with syrup from bottom of the pan.
Bake uncovered for a few minutes.
*Raisins, chopped nuts, dates, figs or coconut may be added as center stuffing, as well.
*A special breakfast treat, in the fall, when all the
delicious apples are available. Great for Sabbath breakfast!!
Red, White, & Blue Parfait
(Or in the USA, A 4th of July Treat!)
Ingredients:

1/2 c. blueberries
-
1/2 c. raspberries
-
1/2 c. vanilla yogurt
-
1/4 whipped topping
Directions:
*In each parfait glass or dessert dish, make a layer of 1/4c. blueberries,1/4 yogurt; 1/4 c raspberries; top each with 2 Tbsp. whipped topping
and serve immediately.
*(To reduce calories and fat, use plain yogurt and low-fat whipped topping!)
Apple Cranberry Cooler

2 c. apple juice

1 c. cranberry juice

1 c. gingerale

1 lemon, sliced
Zucchini Bread
Ingredients:
Directions:
*Blend sugar, oil and eggs. Stir in orange peel,
spices and salt. Add flour mixture and stir.
*Mix in zucchini and nuts. Pour into 2 small greased loaf pans.
*Bake at 350 degrees for 50-55 minutes
Cool 5 minutes and remove from pan
On larger zucchini use mostly the green outside - the white isn’t as flavorful.
Raspberry Delight
(My own creation, after attending a bridal shower and having a similar dish made with fruit cocktail!)
Ingredients:

2 to 3 bags of frozen raspberries
-
(whole) Sugar
-
1 sponge cake (best quality possible)
Whipped topping, thawed (lite works well! or fat-full!)
-
Sliced almonds
Directions: *Pour raspberries into a large bowl to thaw, add sugar to taste.
*You want the berries somewhat sweet, but want them to retain the sour berry taste to contrast with the cake and cream! *If you are in a big hurry, add a little water to frozen berries, then add sugar - this gets the berries ready to use in minutes! *Choose your most beautiful clear glass bowl to display the color and layering.
*Layer berries, torn pieces of sponge cake, sliced almonds and the whipped topping. *If I am serving it right away I cover the top of the mixture with whipped topping, then put a big pile of berries in the center and place a ring of sliced almonds around the berry pile!
*If you are serving later, wait to garnish or just cover with whipped topping, sprinkle with sliced almonds- place a few raspberries on the top when ready to serve. This has always been an "ooh and ahh" treat for a fancy party! It is often the dessert!
Tea Cakes
Ingredients:
2 c. butter
1 c. powdered sugar
4 1/2 c. sifted flour
1/2 tsp salt
2 tsp vanilla
1 1/2 c finely chopped nuts
Directions:
*Cream butter and sugar. Add flour a little at a time. Add salt, vanilla and nuts. Roll into balls 12 inch in diameter. Place on cookie sheet, pat into 1/4 inch thick
cookies. *Bake 10-15 minutes at 400 degrees. Remove and roll in powered sugar.
Summertime Veggie Cookout Pack
This recipe lends itself to your own
choices in vegetables and proteins! Here is how I make mine:
Ingredients:
- 2-3 potatoes, peeled and thinly sliced
-
1 cup small carrots, sliced or in sticks
-
1 cup mushrooms, sliced (fresh or canned)
-
1 big onion, sliced in rings
-
1 cup broccoli florets
-
1 cup celery, small slices
-
1 green pepper, sliced
-
5 choplets, in slices
-
Margarine, salt, and seasonings!
Directions:
On a big piece of aluminum foil, place
the potatoes, carrots, mushrooms, onion, broccoli, celery, and choplets. Spoon
several tsp. of margarine on top of the mix. Shake on your favorite seasonings
( herbs, pepper, seasoned salt). If you love cheese, you can add a big handful
of cheese on the top (that is so good!)
This makes 4 medium sized packets.
Now, fold the aluminum foil in a
packet, really making the ends tight.
Place the packets in the coals of a
campfire or on a propane grill. Turn the packets over every 10 minutes or so.
These packets take about 25-30 minutes to cook. Open carefully, and check the
veggies. This is a great, healthy meal and fun for a family to make together -
fix the veggies, package, and cook!
This recipe is one my Mom loved making
when we (family of 6 children) enjoyed the day at the lake boating;we'd swim
and ski all day on Sundays and then end the day with summer packs and
marshmellows around the campfire.
Nowdays, I make the packs when we take our summer vacation - using a small
grill to cook them. My family always enjoys opening their packs for this yummy
dinner. To a summer treat of veggies!
